I’ve noticed that alot of people are really into baking gluten free these days. It is possible to have delicious gluten free goodies. These gems are dairy free and the only sugar is what’s in the chocolate chips. They earned rave reviews from my product testers. Enjoy!

2 1/4 cups Pamela’s Artisan GF flour blend
2/4 tsp baking soda
1 tsp salt
16 Tbsp butter or coconut oil
2/3 tsp stevia powder (instead of sugar)
1 tsp vanilla
3 eggs, large
2 cups dark chocolate chips
1 cup chopped almonds
1 large mashed banana
1/2 cup soaked goji berries
1/2 tsp xanthan gum
Preheat oven to 350. Lightly grease cookie sheets. Melt butter/coconut oil. Beat it with eggs and vanilla until creamy. Mash banana and add it in along with goji berries. Gradually beat in dry ingredients. Add chocolate chips and nuts last. Drop 1 Tbsp scoops of dough onto greased cookie sheets. Bakes 10-15 minutes or until edges start to brown. Let cool…if you can.
